For tonight’s dinner I made blackened tilapia over polenta cakes with corn salsa. I did a few cheats. I went to Trader Joe’s earlier today and bought frozen roasted corn and already made polenta (it was a log). I could have made the polenta myself, but it was just a lot easier to use the premade stuff especially tonight. It was getting late cause the husband was coming home late and the baby was getting fussy (which explains the iPhone photo versus fancy DSLR photo). The thing that was most time consuming was making the salsa, so the meal can really be whipped up in a snap. Yum yum!
